Lox and Cream Cheese Sandwich a la BlauEarth

I received a box of Kasilof smoked sockeye salmon (the box says it’s sustainable wild Alaskan salmon). It’s from my thoughtful sis-in-law, Pinky, who just arrived from a US tour. I thought of lox and cream cheese sandwich right away. But no bagels in Sunshine City? Fret not! I had my lox on chewy Durong’s malungay pan de sal.

For those who want to try the lively open face sandwich, just spread your bread of choice  with Philadelphia Cream Cheese, add the salmon slices and top with red onions, tomatoes and capers.

It was late before I realized I forgot the capers. Nonetheless, we all enjoyed the smoked salmon pan de sal. I’ll try to make a smoked salmon pizza next.
