Kapuluan Vista Resort’s Yummy Healthy Menu

Dining at Kapuluan is always a great gastronomic experience and never complete without  their famous margarita. Alcohol, in moderate amounts, is good for the heart 🙂

Mike and Alma grow their own veggies… and flowers.

These organic veggies make their eats extra special.

I had this garlic and sun-dried tomato pasta. I wanted to have a second serving but we were running out of time. I’ll have it again next time. Mike says they dry their own tomatoes.

For non-vegans, the best burger in Ilocos, promise!! Consistently grilled the way we like it — kinda burnt on the outside but very juicy inside, and with lots of fresh greens.

Their homemade bread toasted the French way.

Kapuluan in Pagudpud, the common denominator

We keep going back to this little piece of heaven tucked away in Balaoi, Pagudpud. We were there, again, yesterday.

Ambassador of surfing, actor Jericho Rosales and Pure Power Gabriel Valenciano were staycationing for the Holy Week. They hit the beach for some action.

I didn’t mind the sultry sun… the view was great!

Champion surfer Nikki de la Paz was impressive.

Another excellent surfer, architect Buji Libarnes, in red, was having a swell time. I guess everyone had positive vibes. Did I mention he designed the resort? The best choice, I think… someone who loves the beach and truly understands the whole surfing lifestyle.

Kapuluan’s very sweet and nice Alma Oida joined in.

Alma’s husband, Mike, is out to get his adrenalin fix. Both of them attend to the kitchen, their very own organic garden, their guests, the operations, and still find time to ride the waves.

This pair of Sperry Top-Siders caught my attention. I wonder who owns them?

He was taking photos of the surfin’ bunch. I asked if he is a photographer… he is more than that…

He turns out to be cinematographer Ricardo Jose “DBoy” Trofeo.  We talked about Lensbaby, Holga and Diana, Hasselblad, Panasonic LX-3, Leica, Nikon and Cannon, paperweights, Ridley Scott and Martin Scorsese, my camera viewer’s dirty protector and a lot more. His mother is a Rivas from Vigan. “Quiet” is how he described Northern Ilocos. Such a pretty straightforward but humble person… he directed the photography of  quite a number of films such as Nobody, Nobody but Juan.  He wouldn’t tell me; I had to search the net when I got home 🙂

Here’s a larger view of Echo.

Do you recognize this lady?

All geared-up here.

Ahh, BB Gandanghari! My family and I love her!

Love these guys, too. Thanks to Echo and Gab for being so nice.

My first shot of Echo

More on Kapuluan in my next post… hittin’ the sack in a while. It’s 7:18 am.

Kapuluan Vista Resort, A Breath Of Fresh Air

“A walk in Nature never boring in nature great beauty to see

The wild birds are chirping and singing on fence wire and bush on a tree

away from the street and the traffic from human made pollution and noise

Above the gray scrub by the river the skylark he sings as he flies.”

~ Francis Duggan, A Walk In Nature

a breath of fresh air

Kapuluan Vista Resort is as revivifying as it’s  spirited owners — lovely couple , surfers Mike and Alma Oida. The story of how Kapuluan was conceived dates back to San Diego, California where the two met. Mike is from Fresno and Alma is from Oxnard. They planned to come home to the Philippines and live their dreams — build a future together. They went around the country to scout for a family-friendly spot. They headed south to Baler and Samar, then north to La Union, Ilocos and Cagayan. And soon after, they made their life-changing decision —  creating their new lifeforce — KAPULUAN — a 10-room eco-friendly resort in the idyllic barrio of Balaoi in Pagudpud, Ilocos Norte.

The resort has a good following — the likes of actor/surfer Jericho Rosales, top model/pro surfer/yogi Corey Wills, Marie Claire, Preview and Cosmopolitan editors, photographer Norman Crisologo and his wife, designer/stylist Astrud Crisologo; and nature lovers, eco travelers, beachcombers; and people who simply want a temporary escape from the trappings of everyday life.

Though equipped with air conditioners, the design of the spacious rooms in Kapuluan encourages air to circulate within the rooms for those who prefer an ecologically sound vacation. The kitchen serves organically-grown vegetables from Mike and Alma’s own backyard (Click here to read related story). On their menu are select mouthwatering Filipino, American, Mexican and Japanese fare.  Highly recommended are Kapuluan Kilawin, Hummus Burrito, Garlic and Herb Spaghetti, Kapuluan Hamburger,  homemade vanilla ice cream, Banana Butterscotch and their steaks and chops.  Their breads are also baked in their kitchen. Mike is currently testing his Kahlua Pig, a Hawaiian pork dish that is cooked under the earth. The pork is seasoned with rock salt and wrapped in banana leaves and placed together with hot lava rocks inside a pit, and is covered again with earth. My verdict:  fragrant, naturally sweet and succulent with a subtle smoky taste, a great alternative to our native Lechon.

The service is great, personalized and friendly. Surf lessons can be scheduled with  Mike or instructors trained by Mike himself.  Surfboards and snorkeling gear are available. A square swimming pool accentuates its geometric  architecture design.

Australian Serafin Bugejo says of Kapuluan — “Very nice place.” About Maraira-ira Cove, “Beautiful and the ocean… there are no plastics, unlike in other places. Some of the places that I’ve visited…  beautiful beaches, but lots of waste.”
