By far, the most challenging Share Tea variant I have to tackle. I don’t even know what a wintermelon is. (Laughs) It turns out that wintermelon is a kind of gourd (tangkoy or kundol) akin to tabungao. I like candied kundol, but to mix it with cheese? So odd?
This is also, by far, the best Share Tea I’ve had! The salt-cheese foam is meant to be stirred unless you want to be left with a cheese foam. The salty counterpoint to the sweetish veggie taste of wintermelon is spot on. It is unusual, yet easy on the palate — ultra refreshing. A great drink on a hot summer day… well, actually, even on a rainy day like today:)
