We all love this nice savory dish by our talented cook, Lynne. Even picky little Alexa gets excited when she sees it. With Lynne’s permission, I’m posting her minced pork lettuce roll recipe for those of you who want to try some kind of uncontrived contemporary Chinese cooking.
What you’ll need:
1 iceberg lettuce head
1/2 k minced pork
1 c shredded fresh bamboo shoots (optional)
4 pcs shiitake mushrooms, minced
1 large sincamas (jicama), minced
3 cloves garlic, crushed and minced
1 stalk leek, chopped
2 tbsps soy sauce
2 tbsps oyster sauce
2 tbsps hoisin sauce
How to prepare:
1.) Rinse lettuce leaves thoroughly and dry.
2.) Heat some oil in a pan. Sauté garlic, add pork, sauté and simmer until color changes.
3.) Add bamboo shoots, sincamas, mushrooms, sauté and let simmer for a while.
4.) Add soy, oyster and hoisin sauces.
5.) Mix in chopped leeks. Add a few drops of sesame oil. Mix well.
6.) Serve in a bowl. Serve whole lettuce leaves and leek strips separately. Serve with a bowl of hoisin sauce.
Fill leaf with a scoop of the pork filling, hoisin sauce and leeks. Roll neatly and you’re ready to savor the light and pleasingly moist pocket with a healthy crunch.
