Got this sandwich recipe from ANC’s Green Living, the television show with a good dose of healthy living ideas. A robust sandwich with cool cucumber and tangy, tasty feta cheese, it is a no-brainer. All that is needed is baguettes, feta cheese, fresh cucumber slices, lemon or calamansi, extra virgin olive oil, and a dash of salt and pepper.
Slice bread into desired length and cut crosswise. Brush the insides with olive oil and toast in oven. In a bowl, crumble feta; add olive oil, a tiny squeeze of citrus, salt and pepper; and mix. Fill sandwich with the feta spread and cucumber slices.
The clean taste of the cucumber goes wickedly well with the sharp flavors of the rest of the ingredients. Worth eating again and again. Scrumptious!
