Look at what I just discovered on twitter — Skip to Malou — a food blog from the heart. I have to thank Malou for her corned beef sinigang in her “riding the charcutepalooza wagon” post which awakened memories of my mom’s heavenly corned beef casserole. I never got the chance to copy my mom’s corned beef specialty which was like a less soupy “lauya” because Laoag is far from having whole corned beef slab in the market, so, now, I just need to find time to experiment on charcuterie and celebrate the Year of the Meat.
