Here’s a simple but delightful mocha sponge cake from Eng Ho, one of the trusted bakeshops in the Binondo area.
Eng Ho’s chiffon cake is also a bestseller. In fact, it’s been a favorite of mine since I was a child. You can eat it with fresh fruits like strawberries or kiwis and a good amount of whipped cream and you’re off to nirvana.
It’s also easy making a variation of the tiramisu out of it. I usually drizzle some coffee liqueur and brandy over the cake and add a layer of whipped cream, in place of mascarpone cheese, and sprinkle cocoa powder over the whole thing, then let it stay in the refrigerator for a while.
But as they are, the plain cakes are pleasurable.
