Hi-Bol

Now back to the Ilocano culinary culture, I had hi-bol for breakfast. The 20-peso big serving is from Franklin’s, a garage converted into a carinderia on the busy Nolasco St. in downtown Laoag. He makes the best hi-bol in town.

Hi-bol is a paksiw-Ilocano pancit dish popularized by Modern Band in barrio uno.

Ever wondered what hi-bol means? My cook, Lynne, says that the name might have originated from the idiom “hi-voltage”. If you get what she means, papaitan is a mood food. Check out her recipe here.
